Creamy Tomato Basil Soup Recipe
3 tablespoons olive oil
2 red onions, chopped
3 cloves garlic, minced
1 (28-ounce) can crushed tomatoes
4 cups vegetable stock
Freshly ground black pepper
3/4 cup heavy cream
1 bunch basil
Garnish with Parmesan cheese, pepper & basil
1.Heat olive oil over medium-low heat in a large pot. Add onions and season with salt. Cook onions until soft and golden brown (about 15 minutes). Add garlic and cook for 1 more minute, stirring to avoid burning.
2.Stir in the tomatoes and vegetable stock. Season with Kosher salt and ground black pepper. Bring the soup to a boil. Lower heat to maintain simmer for 15 minutes.
3.Mix using a hand mixer or transfer to blender. If using a blender, return mixture to the pot.
4.Stir in the cream and basil, and simmer for at least 15 minutes.
5.Serve with freshly grated Parmesan cheese, black pepper, and basil.
Store in fridge for up to 3-4 days.
