Well, I have some good news for you. There is a little trick that I’ve uncovered to make one thing in your life a little easier. Here is how to create a thoughtful tradition by making a homemade soup as part of a weekly ritual.

As a college student, I babysat for a family with two little girls. I didn’t know how to cook at the time, so their fridge was always stocked with easy meals from Trader Joe’s. During the fall and winter, their mom made us a delicious homemade soup and stored it in the fridge to have for dinner a few times a week.

We always looked forward to our cozy soup nights and turned them into a special little occasion. Sometimes the girls would even take baths before dinner so they could eat in their pajamas to feel extra cozy. Since it was so easy to prepare, there was always time to set the table and make a festive centerpiece.

When I moved away after graduating, their family surprised me with a handmade cookbook complete with each soup recipe. It was one of the most beautiful, thoughtful gifts I have ever received! Now I keep the tradition going by making a homemade soup during the fall and winter as a weekly ritual.

Creamy Tomato Basil Soup Recipe

Ingredient List:

3 tablespoons olive oil

2 red onions, chopped

3 cloves garlic, minced

1 (28-ounce) can crushed tomatoes

4 cups vegetable stock

Kosher salt

Freshly ground black pepper

3/4 cup heavy cream

1 bunch basil

Garnish with Parmesan cheese, pepper & basil

The Steps:

1.Heat olive oil over medium-low heat in a large pot. Add onions and season with salt. Cook onions until soft and golden brown (about 15 minutes). Add garlic and cook for 1 more minute, stirring to avoid burning.

2.Stir in the tomatoes and vegetable stock. Season with Kosher salt and ground black pepper. Bring the soup to a boil. Lower heat to maintain simmer for 15 minutes.

3.Mix using a hand mixer or transfer to blender. If using a blender, return mixture to the pot.

4.Stir in the cream and basil, and simmer for at least 15 minutes.

5.Serve with freshly grated Parmesan cheese, black pepper, and basil.

Store in fridge for up to 3-4 days.
